A must around Easter. This dessert was created to use up old bread that had gone hard.
The traditional recipe is very straight forward. You soak the bread in milk, then dip it in egg and then proceed to deep fry it in olive oil. Once fried you dip it in a mix of sugar and cinnamon and there you go, a torrija!
The best ones are obviously cooked by Spanish grandmas but you also find them – generally with moderns twists like ice cream- in restaurants.

A pastry made with flour, egg, sugar and salt. They can be or various shapes but, generally,come with a boiled egg in the middle.
People eat them around holy week and in some regions it is typical to be eaten on Easter Monday (Lunes de Pascua in Spanish).
In some areas, like Catalonia, is also traditional for godfathers to get them for their godchildren but hey have evolved so much they are now far away from the classic ones. They are massive and come covered in chocolate.
3. Easter foods in Spain: Potaje de vigilia
During Lent, catholics in Spain are supposed to abstain from eating meat on Fridays. While not many people observe this tradition nowadays, this Spanish specialty come from a time when people did.
Potaje de vigilia is a stew made with vegetables, cod and chickpeas and it was a very often meal for Fridays.

4. Pestiños
An easter must in the south of Spain, particularly Andalusia. Pestiños are a sweet treat made with flour, fried in olive oil and then eaten either with honey or sugar.
5. What do people eat in Holy Week during Spain? Garlic or Castillian soup
The to go soup in thought times due to its nutrients and its cheap price. Typically presented in a clay pot the soup has old bread, garlic, olive oil, paprika and eggs.
They come from Castile and Leon, where people will have it on Good Friday after the religious processions.
